This cheese harmonizes the essence of aged gouda with rich and nutty Parmesan to create a beautiful melody of flavor. We produced 500 pounds of this original last year. After months of patient curing, it is ready to ship today. Buy yours while supplies last!

FRESH TIPS:

All of our cheeses last a year or more, sealed in the fridge (they should not be frozen - exceptions below)

  • Cheese spreads last 10 months in the fridge
  • Cheese curds should be enjoyed or frozen within 2 weeks of delivery for best flavor; they can be stored in the freezer for up to 6 months

WE HONOR OUR ROOTS

Our cheese is made the same way since Eric’s Great Grandpa Fred came here from Switzerland in 1919 (though with a bit more fancy equipment). The milk comes in, cheese makers add the cultures, curd is formed, any seasonings are added, cheese is pressed into blocks and allowed to cure, usually for several months (or sometimes years for aged varieties). The cheese is then cut and wrapped, labeled, and shipped to your door.

WE SWEAT THE DETAILS

None of our products are ever processed or artificial in any way. Just good, old fashioned Wisconsin cheese. Milk is sourced from local family farms who care. Seasonings are always natural and simple, never artificial.

So Good!

I was more than pleasantly surprised by this cheese. The balance of the aged Gouda and Parmesan was perfect to me. I was really sorry I hadn’t bought more and now it’s showing SOLD OUT
