We take care to protect the integrity of your cheese in transit. Our vacuum-sealed, hard cheeses are safe outside of refrigeration in transit. If temperatures are above 60 degrees in your location, we ship in insulated boxes with gel ice packs to protect your shipment, at no extra charge.
"El Diablo" Scorpion Pepper Gouda: Cultured pasteurized milk, salt, enzymes, scorpion chili peppers, annatto coloring.
"Bantam" Honey Sriracha Gouda: Cultured pasteurized milk, salt, enzymes, annatto coloring. Flavoring: Honey granules, salt, spices, dextrose, onion, sriracha sauce (aged cayenne red peppers, vinegar, garlic), sugar, brown sugar, garlic powder, maltodetrin, sodium diacetate, natural flavor.
"El Perrito" Mango Habanero Gouda: Cultured pasteurized milk, salt, enzymes, annatto coloring. Flavoring: Sugar, dried honey (refinery syrup, honey), maltodextrin, habanero peppers, spices, natural mango flavor.

Our cheese is made the same way since Eric’s Great Grandpa Fred came here from Switzerland in 1919 (though with a bit more fancy equipment). The milk comes in, cheese makers add the cultures, curd is formed, any seasonings are added, cheese is pressed into blocks and allowed to cure, usually for several months (or sometimes years for aged varieties). The cheese is then cut and wrapped, labeled, and shipped to your door.
None of our products are ever processed or artificial in any way. Just good, old fashioned Wisconsin cheese. Milk is sourced from local family farms who care. Seasonings are always natural and simple, never artificial.
We hate robotic, impersonal customer service, so we aim to be its antithesis. We are here for any question you have and we love nothing more than a happy, satisfied customer! We never outsource customer service or take shortcuts here.
My husband and I could not be more please with your purchase. The cheeses are high quality ,and the taste is unbelievable. We live on the water and have happy hour on the patio every evening, and the cheeses have been a wonderful addition!!

I love the spicy cheeses. I haven’t eaten them all yet but one of the cheeses was crumbly, didn’t cut as slices but more crumbly. I was surprised, it still tasted great, just crumbly. I always recommend this cheese to my friends
