    Patience is a virtue, especially when it comes to this rich and VERY sharp Wisconsin cheddar. Expect rich, complex flavors along with pockets of crystalized proteins formed during 15 years of patient curing. Eat this one on its own –– save a different variety for your mac and cheese! –– or pair with dry red wine, freshly picked apples, or dried fruit.
